Ingredients:
• 250 g Eskort Cheese Mini Viennas
• 10 ml oil
• 1 onion, peeled and sliced
• 1 clove garlic, peeled and finely chopped
• 200 g cherry tomatoes, halved or
• 4 tomatoes, chopped
• 100 g snow peas
• 100 g julienne carrot strips
• ½ red pepper, sliced
• ½ yellow pepper, sliced
• Salt and freshly ground black pepper
• 2.5 g sugar
• Packet instant noodles
Method:
- Heat oil in a wok or frying pan.
- Stir-fry onion over high heat for 3 – 4 minutes, add garlic and stir-fry for 1 minute.
- Add vegetables and sugar.
- Stir-fry for a further 2 – 3 minutes.
- Stir in the Mini Viennas and season.
- Cook noodles according to instructions and add to the stir-fry.
Options: Use pre-prepared stir-fry vegetables.
Add soya sauce for a richer flavour.
